Mundiwindi Fruit Cake

My grandmother, Rosaline Braine, visited Mundiwindi in June 1939 and acquired a fruit cake recipe. This handwritten recipe was headed "Mundi Windi Fruit Cake" and reads:

1 Cup of Butter
1 Cup of Sultanas
1 Cup of Currants
1 Cup of Lemon Peel
1 Cup of Sugar
1 Cup of Cold Water
½ Pkt of mixed spice

Place all into a saucepan. Boil for a few minutes.

Allow to cool. Add 2 or 3 eggs one at a time. Add 1 cup of S.R. Flour and 1 cup of Plain Flour & 1 teaspoon of B Soda & a little essence.

Bake in a moderate oven for 2 hours. Temp 380° [Fahrenheit; nearly 200°C]

Notes:
1. I am confident that my (John's) mother used Brandy as well as, or instead of, water.
2. Ruth generally uses "Ruth's Fruit Cake" recipe so if you had a fruit cake made by Ruth that is probably the recipe you are interested in.
